OUR APPROACH
The Coffee CEO Who Couldn't Drink Coffee
I spent my career in specialty coffee, from finance manager to CEO of a 100+ person company. Then, for about six months, I couldn't drink it at all. First stomach ulcers, then acid reflux that never fully left. I tried every workaround before it hit me that I could just build something better.
Then I started asking around, and found I was nowhere near alone. Most people who quit coffee never stopped loving it. Their stomachs made the decision for them, and everything on the shelf asked them to accept worse coffee as the price of feeling fine.
So I built the other option. Months of sourcing, roasting, and testing until I had a cup that tasted like real coffee without the burn. Midnight Kettle is for everyone who braces before the first sip and should not have to.
Coffee was never the problem. The acid was.

What makes your coffee low acid?
We keep the acid down at every step. Most low-acid coffee controls one of those, or strips the acid out after the fact. We manage it the whole way through.
Does low acid mean weak coffee?
No. Lower acid, not lower caffeine. You get the full body, full strength, and full flavor of real coffee. The only thing missing is the harsh, sour bite.
How do I know it's actually low in acid?
It comes down to how we source, roast, and brew, a more deliberate and more expensive way to make coffee, and the whole reason we exist. We don't strip the acid out after the fact. How acidic is your coffee?
Our coffee is third-party tested. Acidity is measured by an independent lab, not by us. What matters as much as the measurement is how we get there: we keep the acid down at the bean, the processing, and the roast, rather than stripping it out afterward. That is what makes the cup smooth instead of sharp.
Will it still taste bold?
Yes. Low acid doesn't mean low flavor. Expect a rounder, smoother, full-bodied cup without the bitterness. If you didn't know it was low acid, you'd just call it great coffee.
Is your coffee organic?
Our Medium and Dark Roasts are USDA Certified Organic. Our cold brew is two ingredients, coffee and water; the current run is not certified organic.
