What makes your coffee low acid?
We keep the acid down at every step. We start with beans grown in conditions that make them naturally lower in acid, favor processing that keeps the cup smoother, and roast to a profile built to hold acidity low without roasting the beans dark. Most low-acid coffee controls one of those, or strips the acid out after the fact. We manage it the whole way through.
Does low acid mean weak coffee?
No. Lower acid, not lower caffeine. You get the full body, full strength, and full flavor of real coffee. The only thing missing is the harsh, sour bite.
Is this just decaf?
No. Decaf takes the caffeine out. We leave it in. What we take out is the sharp, acidic bite. You keep the coffee, you keep the kick.
Isn't acidity a good thing in specialty coffee?
There are two kinds. In specialty coffee, "acidity" means brightness, the pleasant note at the front of the cup, and you can keep that. What we take down is the harsh, sour bite that sits heavy after you drink it. You keep the brightness, not the burn.
How do I know it's actually low in acid?
It comes down to how we source, roast, and brew, a more deliberate and more expensive way to make coffee, and the whole reason we exist. We don't strip the acid out after the fact. We keep it down at every step: green coffee grown in conditions that make it naturally lower in acid, processing that keeps the cup smoother, and a roast profile built to keep acidity low without roasting the beans dark. Acidity is measured by an independent lab, not by us.
How acidic is your coffee?
Our coffee is third-party tested. Acidity is measured by an independent lab, not by us. What matters as much as the measurement is how we get there: we keep the acid down at the bean, the processing, and the roast, rather than stripping it out afterward. That is what makes the cup smooth instead of sharp.
Will it still taste bold?
Yes. Low acid doesn't mean low flavor. Expect a rounder, smoother, full-bodied cup without the bitterness. If you didn't know it was low acid, you'd just call it great coffee.
Is your coffee organic?
Our Medium and Dark Roasts are USDA Certified Organic. Our cold brew is two ingredients, coffee and water; the current run is not certified organic.
What are the tasting notes?
Medium Roast: honey roasted peanut, molasses, cocoa. Dark Roast: baker's chocolate, molasses, hickory.
What's in the cold brew?
Coffee and water. That's the whole recipe. No sugar, no dairy, no additives, steeped cold for 24 hours so the flavor comes out full and the bitterness never does.
How should I store my coffee?
Keep it airtight, away from light, heat, and moisture. A cool pantry beats the fridge. Whole beans stay freshest for about four weeks after opening, so grind just before brewing.
What brewing method works best?
Our roasts shine across methods: pour over, French press, drip, espresso, or cold brew. For the smoothest cup, use a medium grind and water just off the boil, around 200°F.
How do subscriptions work?
You set it up on the product page, not at checkout. Pick your roast, size, and grind, choose Subscribe and Save instead of one-time purchase, then pick how often you want it to arrive. The more often it arrives, the deeper the discount:

When will my order ship?
Orders ship within 1 to 2 business days and you'll get a tracking link when it leaves us. We ship via USPS and UPS, and delivery usually takes 2 to 5 business days depending on where you are. Free US shipping on orders over $40.
Do you ship outside the United States?
Not yet. We currently ship within the United States only. If you're outside the US and you want Midnight Kettle Coffee, email hello@midnightkettlecoffee.com and we'll tell you when we open up your country.
What if my coffee arrives damaged or I'm not happy?
If something arrives damaged or wrong, email hello@midnightkettlecoffee.com within 7 days of delivery and we'll replace it or refund it. If the coffee arrived fine but is not right for you, tell us within 30 days and we'll help you find a roast that suits you better, or make it right. Because coffee is a food item we can't take a physical return, so you never need to ship anything back.
